Ingredients
- 250 g chorizo
- 8 large tiger prawns deveined and butterflied
- 4 tbsp olive oil
- 1 tsp smoked paprika
- some bread crusty
- 4 cloves garlic
- 1 bunch coriander small
- 1 lime
- 1 tbsp sherry vinegar
- 1 chilli
- salt and pepper
- 1 thi yyy
- vsgerh

Instructions
- Preheat oven 200c
- De-vein and butterfly prawns
- put oil and chorizo in a roasting dish, in the hot oven for 3 minutes, until the oil just starts to turn red.
- add chilli, garlic, paprika, prawns and vinegar (with a good helping of salt and pepper), swish it all around to get everything coated. cook for 5-10 minutes until the prawnxs start shrinking and the chorizo is curling at the edges
- Sprinkle over chopped coriander and lime juice, plus salt and pepper to taste
